Mexican Gastronomy

The UNESCO has added Mexican Gastronomy to its list of intangible cultural heritage, alongside french, chinese, moroccan, japanese and italian gastronomies. Mexico gave the world tomatoes, beans, corn, pepper, avocado, squash, nopal ( prickly pear ), cocoa, vanilla, chilli pepper and so forth. It is an ancestral cooking style given mostly by the astecs and the mayas while being contributed by many other cultures over time - such as spanish culture. It showcases a lot of creativity to accomodate the ingredients and enrich them with sauces that can sometime be very hot. It is a colourful and joyful style which mirrors the alebrijes, actually adorning Lille's streets as part of the ELDORADO event, which invited country happens to be Mexico.
